Pastry Cdp / pastry sous chef

Currently in charge in training new CDP for SOLIS, a fine dining restaurant. I have responsibly handled the Thomas keller grill Desserts as a pastry sous chef, making sure it matches guests expectations and latest culinary standards . worked as a CDP in any station in both pastry and bakery to fill up the position when short in manning.

I was responsible for all the bread and desserts for 200 pax. makes requesition and inventories on weekly basis. I take pride in helping other stations to get the job done for the whole galley.
